Lentil and Sausage Soup (CB's Faves)

Ingredients
Lentil and Sausage Soup:1 tsp olive oil1 sweet yellow onion, diced2C carrots, diced2C celery, diced3 cloves of garlic, minced2 15 oz can of diced tomatoes5 Mozzarella and Roasted Garlic Chicken Sausage, quartered and dicedFreshly cracked pepper, to taste1/2 tsp dried basil1/4 tsp dried oregano1 bay leaf8 cups of chicken broth4 3/4 cups of prepared lentils (2C dry)
Directions
Heat the olive oil in a large Dutch oven over medium heat. Add the onion and sauté for 2-3 minutes. Add the carrots, celery, sausage, garlic, tomatoes, freshly cracked pepper, basil, and oregano; stir and cook for 2-3 minutes. Add the chicken broth, lentils and bay leaf, stir then cover and simmer for 1-2 hours.

Makes 18 - 1 cup servings... 2C makes a nice meal.
