Italian Style Zucchini Chicken Pasta

Rotisserie Chicken breast1/2 onion (we prefer red, but any will work)2-3 Zucchinis8 oz of fresh mushrooms3 tbsp Olive Oil2 tbsp of sliced olives1 Plum Tomato (any diced tomato will work)6 oz cooked pasta of your choice (we prefer Farfalle)Salt and fresh cracked pepper to taste
Start your pasta cooking.
Saute your onion cut in pieces in the olive oil. When it starts to lilt add diced zucchini and mushroom and shredded rotisserie chicken breast pieces. (Save yourself the headache and pick one up at the grocer on your way home from work!) Once the veggies start to soften top with the diced tomato and olives. Add salt and cracked pepper to taste. Makes 4 servings. Toss with your pasta and serve with a side salad.
