Chicken Stir Fry

Ingredients
1 cup red pepper (cut into bite sized pieces)1 cup green pepper (cut into bite sized pieces)1 cup yellow pepper (cut into bite sized pieces)1 cup sugar snap peas (cut if you want)1 tbsp ginger finely minced or grated2 tbsp all fruit apricot spread (like Polaner)2 tbsp lite soy sauce 2 tbsp water1/2 tsp corn starch2 chicken breast halves (I used the frozen kind) cut into strips or bite sized pieces
Directions
Make a sauce from the apricot fruit spread, soy sauce, corn starch, and water. MIx and set aside.

Stir fry the chicken and giner in the seasame oil. Remove chicken and set aside after cooked.

Stir fry the vegetables in the canola oil until the vegetables are bright and crisp (3 minutes).

Add chicken back into the vegetables. Add the previously made sauce. Mix all ingredients. Serve.

Great with brown rice (not included with calorie count).
