Whiting Florentine

1 spray cooking spray1-1/4 pounds whiting - 4 - 5 oz pcs1/8 t salt1/8 t black pepper10 oz chopped frozen spinach, thawed & well drained1/4 cup fat-free sour cream1/4 cup chopped onions1/2 t garlic powder3 cups yellow summer squash, sliced and steamed
Preheat oven to 400 - coat shallow pan with cooking spray.
Season both sides of fish w/ salt & pepper and place in pan.
In food processor, combine spinach, sour cream, onion & garlic powder. Process until smooth
Spoon spinach mixture over fish. Cover with foil & bake 10 minutes. Uncover and bake until fish is fork-tender, about 5 minues more.
Yields 1 piece of fish, about 1/3 cup of spinach mixture and 3/4 cup of squash per serving.
