Oppsie Cake w/ Chocolate Filling & Whipped Topping

Ingredients
CAKE5 eggs5 oz cream cheese1/8 tsp cream of tartar1 tps vanilla extract10 packets of steviaPreheat oven to 300. Grease three 9" cake pans.Seperate eggs. Beat egg whites and cream of tartar until stiff peaks form.In a seperate bowl, combine egg yolks, vanilla, stevia and cream cheese, gently fold into egg whites. Don't over mix or egg whites will break down.Pour mixture evenly into greased pans, and bake for 20-30 minutes, or until inserted knife comes out clean. Remove cakes from pan when cool.CHOCOLATE FILLING1 1/2 cups heavy whipping cream*3 tbsp baking cocoa5 packets stevia1 tsp vanillaWhip all ingredients together until soft peaks form. Don't over mix or you'll get a buttery consistency.*Adjust cocoa to tasteWHIPPED TOPPING3/4 cup heavy whipping cream1 tsp vanilla2 packets steviaWhip all ingredients together until soft peaks form. Don't over mix or you'll get a buttery consistency.To assemble cake, take one cooled cake layer and place on plate or tray. Use 1/2 the chocolate filling and spread evenly on cake. Top with second cooled cake layer and spread on rest of chocolate filling. Finally, top with last cake layer, and top with whipped topping.
