Gingerbread Cake (152 calories per 1/16th)

Ingredients
0.5 c. Splenda (white)1 can Pumpkin, UNsalted (not "pie filling") about 1.5 cups2 egg whites3/4 c. molasses1.5 tsp baking soda**1 cup HOT water (Put **SODA in to dissolve.)2 c. whole wheat flour0.5 c. white flour2 tsp ground ginger3/4 tsp ground cloves1 tsp salt2 tsp cinnamon
Directions
Cream together Splenda, pumpkin, egg whites & molasses.

Sift dry ingredients together and add to above mixture.

Add the hot water/soda liquid and beat until smooth. If needed, add more hot water (plain) a little at a time.

Bake in a sprayed, 9 x 13 inch pan at 350 for 35 minutes. Allow 10 minutes to cool then cut into 16 squares.

MAKES 16 servings.
If desired, sprinkle cinnamon on top & serve warm.
