Morning Glory Muffins

Ingredients
2 C Flour1 1/4 C Sugar2 tsp. baking soda2 tsp. cinnamon1/2 tsp. salt2 C grated carrot1/2 C raisins1/2 C nuts1/2 C coconut1 apple, peeled, cored & grated3 eggs1 C salad oil2 tsp. vanilla
Directions
Mix dry ingredients in large bowl. Stir in carrots, raisins, nuts, coconut & apple. Beat eggs in a bowl &add salad oil & vanilla. Stir into flour mixture until batter is just combined. Spoon into well greased muffin cups, filling 7/8 full.
Bake 350 degree for 20 min.
14 to 18 muffins (I made 20)

    I am so happy the toddlers liked them! They freeze well and are a pretty healthy breakfast muffin for the elderly too!
