100 Calorie Peanut Butter Chocolate Oat Cookies

2 T unsalted butter (room temp.)6 T. unsweetened applesauce1/2 c. creamy peanut butter1/3 c brown sugar1/3 c white sugar1 egg1 egg white1 t. vanilla2 1/2 c. whole grain oats (not instant)--milled in a food processor to the consistency of coarse flour1/2 c. flour1 t. baking soda1 t. salt1/2 c. milk chocolate chips, chopped even finer (place on a cutting board and run through with a large kitchen knife several times--you'll have some "shavings" and some mini-chips.)
Preheat oven to 350 degrees.
Cream butter, applesauce, peanut butter, and both sugars. Add eggs and vanilla and blend just until incorporated.
Mix oat "flour," regular flour, baking soda and salt in a bowl, then stir it into the butter/sugar mixture. Add the chocolate and stir well.
Spray a cookie sheet with nonstick spray and drop the cookies in ping-pong-sized globs. They won't spread too much, so you can get 12 on a sheet.
Bake at 350 for 12 minutes. Do not overbake! They'll be soft but sturdy.
