Aduki Bean Tabouli

1 cuo of fresh cilantro (you can substitute parsley or watercress for variety)1 15oz can of Eden organic Aduki beans1 cup raw brown Basmati rice1 fresh lemon4 scallion stalks 12 Kalamata olives2 tbs extra virgin olive oilgarlic powder to taste
Cook the basmati rice as per package directions. Meanwhile chop cilantro, kalamata olives and scallions. Add these to the cooked rice. Add rinsed Aduki beans, olive oil, lemon juice and garlic powder. Mix well and chill. Makes 11 half cup servings. Enjoy!
