Spicy Creole Beans

Ingredients
1 pound dried black eyed peas (washed, soaked overnite and drained)1 bell pepper, chopped1 med onion, chopped1 c. chopped celery1 c. chopped green onions (scallions)2-3 tsp liquid smoke (or to your taste)1 tsp garlic powder1 tsp tobasco sauce or to your desired hotnesssalt and pepper to taste
Directions
Wash peas, soak overnite and drain. Place all ingredients except hot sauce and salt/pepper in large pot. Cover with water and cook 1 hr or till peas tender. May need additional water during cooking time. Add tobasco and salt and pepper to taste. This is good by itself, a side dish or with brown rice.

Makes about 10 1-cup servings
