Ingredients
1 Tbsp Olive Oil1 large red onion, chopped2 cloves garlic, minced2 cups broccoli1 cup asparagus, cut on the bias1 cup mushrooms, sliced1 red or yellow pepper, chopped12 eggs, or egg substitute1 cup coarsly grated Parmesan Cheese
Directions
Makes 6 servings

In an oven proof skillet, heat olive oil. Add onion, saute for 2 min. Add garlic, broccoli, asparagus, mushrooms, and red pepper. Saute together for 5 minuts. Add salt and pepper.

Meanwhile, beat the eggs with the Parmesan Cheese. Add to the skillet and scrape the bottom, moving the eggs around. Cook until eggs are almost set. When almost set, place the skillet in the oven and cook until the top is brown, about 10 more minutes.
