Banana Flax Muffins

Ingredients
6 very ripe bananas, mashed1/2 cup ground flaxseed4 large eggs1/2 cup canola oil1/2 cup sugar1 1/2 cup flour1 tsp salt1 tsp baking soda1 tsp baking powder1/2 cup nuts (pecans)
Directions
Beat eggs, oil, sugar, and bananas together.

Combine flour, salt, baking powder, and soda together in another bowl.

Gradually mix flour mixture into banana mixture. Mix until blended.

Mix in nuts.

Bake in muffin tin (with liners) for 20-25 minutes at 350 degrees.

    I think the next time I would add a bit more flavor, such as cinnamon or vanilla. The texture takes about half a muffin to get used to, but then quite tasty. - 4/5/09
