one bell pepper dicedmozzarella cheese (shredded)milk 1% low fat sour creamonion diced (about cup)one tomato dicedfour corn tortillas diced and baked in oven until crunchy
heat skillet throw in onion and bell pepper let cook down a bit while that is happening mix eggs and milk and set asidethen throw in tomato let sit a minute throw in tortilla strips turn heat down a few notches to keep eggs from browning and pour egg mixture. fold in carefully (do not scramble fold)
it will be set but not dry it is great top with cheese and sour cream yummm
