Baked Blueberry and Peach Oatmeal

3 cups oatmeal1/4 cup Splenda brown sugar2 tsp baking powder1/4 tsp salt2 egg whites1 egg1 1/4 cup skim milk1/4 cup canola oil1 tsp vanilla extract15 ounce can peaches - drained and chopped1 cup blueberries1/3 cup walnuts, chopped
Mix oats, brown sugar, baking powder and salt. Separately whisk together egg whites, egg, milk, canola oil, and vanilla.
Prior to baking mix wet and dry. Let stand 5 minutes, then fold in fruit. Place in greased pan. Top with walnuts.
Bake in greased 11X7 pan at 350 degrees for 35 - 40 minutes, until top is lightly browned and internal temperature is 160.

We love this recipe - the best baked oatmeal recipe we've found. I use reg. br. sugar, but only use 1/4 c. and is still plenty sweet. If you've never tried baked oatmeal, this recipe is a MUST TRY! ... and if you like baked oatmeal, this one is sure to be a favorite of yours. - 5/24/11
