Slow Cook Southwestern Chicken "Tweaked"

Ingredients
1 16 oz. can whole sweet corn, rinsed & drained1 16 oz. can black beans, rinsed and drained1 16 oz. jar of salsa (mild-hot, your preference)12 oz skinless chicken (breasts or tenders)2 oz low fat shredded cheddar cheese 2 oz low fat Mozzarella cheese2 oz low fat chicken broth** add more if needed
Directions
Drain and rinse corn and black beans and add to crock pot than mix in 8 oz of salsa. Place chicken on top and
pour remaining 8ozs of salsa over the chicken. Add 2ozs of chicken broth then cover and cook 7-8 hours on low or 3-4 hours on high. You may want to add a bit more chicken broth should you notice a lack of liquids during cook time. Sprinkle with cheese before serving.

I served this with brown rice and salad for a complete meal

    I tweaked this recipe a bit, using reduced sodium black beans, frozen corn, and normal chicken broth (it's what I had on hand). I also added about 1/2 a tsp of chilli powder for extra flavoring. It tasted really good, overall, if a little bit bland. - 1/24/13
