Nan's cranberry delight muffins

1 cup quick oats3/4 c. non fat milk1 1/2 c. whole wheat flour1 tblsp. baking powder1/2 tsp baking soda1 c. whole berry cranberry sauce.1/4 c. egg beaters1 tsp vanilla extract. 1/4 cup chopped walnuts or walnut meal (cheaper)
Soak oats in milk ,add eggbeaters,and vanilla mix, in another bowl add all dry ingredients mixing well. Stir cranberry sauce and walnuts into wet mixture then add to dry ingredients until all are moistened. Do not over mix! Coat 12 serving muffin tin with non stick spray and fill each tin 3/4 full. bake at 350 for 17 minutes or until toothpick inserted comes out dry. Leave in muffin tins for about 7 minutes then remove. Makes 12 muffins that are fantastic.
If you want you could even drizzle light glaze over top.
