Apple Strudel Muffins

Muffin BaterOrganic All-Purpose White Flour, 2 cup (remove)Baking Powder, 1 tsp (remove)Baking Soda, .5 tsp (remove)Butter, salted, .5 cup (remove)Granulated Sugar, 1 cup (remove)Egg, fresh, 2 medium (remove)Vanilla Extract, 1.25 tsp (remove)Apples, fresh, 3 medium (2-3/4" dia) (approx 3 per l (remove)ToppingsBrown Sugar, .33 cup, packed (remove)*Flour, white, .1 cup (remove)Cinnamon, ground, .02 tsp (remove)Butter, salted, 1 tbsp (remove)
beat sugar, butter and eggs in large bowl
in small bowl mix all dry ingredients
Add apples to butter mixture
add flour mixture little by little
pour into muffin cups
combine topping by cutting butter into sugar, flour and cinnamon. sprinkle on top.
Bake @ 350* for 20 minutes until tests w/toothpick are clean
