Chicken & Black Bean Crockpot taco/burrito

1 lb boneless, skinless chicken breast, 1 can mexicorn, drained and rinsed1 can black beans, drained and rinsed4 cups Enchilada Sauce1 can Rotel (mild, medium or hot... your choice!)1/2 tsp Cumin1/2 tsp red pepper flakes1 Tbls dried minced onion OR 1/2 cup diced fresh white onion
Place all ingredients in crockpot and set on low for 6-8 hours. Shred chicken and stir prior to serving. If serving with tortillas or tacos, you may wish to remove the mixture from the crock pot and drain the excess sauce/juices. If serving as a chili/soup do not drain excess.
