Microwave Low Carb Stuffed Bell Peppers

4 large or 6 medium bell peppers (any color)1 1/2 pounds ground sirloin1 large or 2 medium onions, chopped5-6 fresh mushrooms, choppedthyme, pepper, other seasonings to tastegarlic, 2 cloves chopped1 can tomato paste, 6 oz.1 can tomato sauce, 8 oz2 T. grated parmesan cheese
One serving is a whole medium stuffed pepper.
Cut tops off peppers and clean out seeds. Brown meat and onions, drain off fat. Stir in tomato paste, seasonings, garlic, and mushrooms and mix well. Fill peppers with meat mix and put in oblong baking dish sprayed with non-stick cooking spray. Cover peppers with tomato sauce and sprinkle with parmesan cheese. Heat covered on HI for 10-12 minutes (more for large peppers). Let stand covered for 5 minutes.
I like the taste of red peppers, but you can use green, red, or yellow. I have also made this with ground turkey and it is equally good.
