Whole Wheat Artisan Bread with honey

Ingredients
7 cups whole wheat flour1 tsp kosher salt2 packets of active dry yeast1/4 cup Vital wheat gluten1/2 cup honey3.25 cup water
Directions
mix all dry ingredients then honey then water 100F mix all let it rest lightly cover for 2 hours then put in loaf pan and let it rest 40 minutes , 2 lbs dough and bake for 45 min at 350F
Make 2 loaf of 2 lbs each , 15 slices per loaf
