Chicken scallopine with Apricot Sauce

4 4-oz. chicken breast, pounded thin1 egg, beatenDrop of water1/2 cup panko bread crumbs1 tbsp olive oil1 tbsp light butterFor sauce:1/2 cup apricot fruit spread2 scallions, chopped1 tbsp dijon mustard1
Makes 4 4-oz. servings
Add a little water to the beaten egg. Dip each chicken breast in the egg, then coat lightly with panko crumbs.
Melt butter and oil on medium high heat. Cook chicken until done through, about 3-4 minutes on each side.
For the sauce, combine the apricot spread, dijon mustard and scallions. Serve with the chicken breasts.
