Mom's Potato & Bean Soup

Ingredients
1 T olive oil1 large onion, diced6 large potatoes, peeled and diced6 c cooked kidney beans (can use 2 cans rinsed)spinach or escarole optional
Directions
1. In 4 qt pot heat oil, add onion and saute until soft (5 min).
2. Add diced potatoes, cover with water, bring to boil. Boil until soft (10 min).
3. Add kidney beans, heat thoroughly
4. Add spinach optional
