4 boneless, skinless chicken breast, cut in half1 pkg turkey kielbasa (375 g) sliced into rounds2 cups brown rice28 fl oz canned diced tomatoes - no salt1 cup low sodium chicken broth10 oz can mushrooms, drained and rinsed2 TBS oregano1 TBS basil1 TBS fennel seed1 tsp salt1 tsp pepper
Mix all ingredients except paprika & chicken in large casserole dish. Cut each breast in half and place on top of rice mixture. sprinkle with paprika. Cover and bake. 350 degrees for 1 hr 15mins. Let sit 10 min before serving
