Curried Tofu w/Stewed Tomatoes

Ingredients
Curry3 tbsp evoo1 block tofu1 can Stewed TomatoesGarlic (fresh or 'canned')Onion FlakesAny other seasonings (I added a bit of Mrs. Dash Southwest chipotle)Optional: Fresh or Frozen Veggies
Directions
Freeze and press tofu.
Mix 3 tbsps oil and heaping teaspoons curry, heat for a few minutes. Once fully mixed, add diced tomatoes, fresh veggies, seasonings, and tofu, cook for 10 minutes on low.
