Sauteed Kale with Proscuitto and Vinegar

Ingredients
2 Bunches Kale, cleaned and chopped3 slices proscuitto1 T olive oil1 T Cider Vinegar1/4 t salt1/4 t pepper
Directions
Cook kale in boiling salted water uncovered for 5 minutes; drain well. Cook proscuitto in skillet over moderate heat until crisp, 5 minutes. Add oil and kale to proscuitto and cook over moderately high heat while stirring until heated through, about 3 minutes. Toss kale with vinegar, salt and pepper.
