Beef Tagine with Sweet Potato

Olive Oil, 2 tbsp (remove)Onions, raw, 2 medium (2-1/2" dia) (remove)Canned Tomatoes, 1 can (remove)Garlic, 2 clove (remove)Sweet potato, 2 cup, cubes (remove)Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia) (remove)Tagine spice mixPaprika, 5 tsp (remove)*Coriander leaf, dried, 2 tsp (remove)Cinnamon, ground, 1 tsp (remove)Pepper, red or cayenne, 1 tsp (remove)Allspice, 0.5 tsp (remove)Beef, top sirloin, 400 grams (remove)
Combine the tagine mix and toss the beef in the spice to coat it.
Heat the oil in an ovenproof dish and brown the meat
Remove and add the onions and garlic and saute
Return the meat to the dish and add the rest of the ingredients plus 1 cup of water.
Cover with a lid and cook on low heat for 1 hour until the meat is tender.
Serve with rice if you like or just eat on its own.
