Ginger Peanut Tofu Salad

Ingredients
Directions
1 block firm tofu1/4 cup creamy peanut butter1/4 cup thinly sliced scallions2 Tablespoons soy sauce2 Tablespoons grated ginger2 teaspoons agave syrup or honey1 clove garlic, pressedSiracha Sauce (Asian hot sauce), to taste
Mash the tofu well.
Add the Peanut Butter, stiring until well mixed. (you may want to heat the PB to make it easier to stir).
Add Seasame Oil.
Add scallions, soy sauce, ginger, agave/honey, garic glove and siracha sauce, mix well.
(I have also added Edamame and the left over Spark People Kale Tofu Stir Fry)
