Senate Bean Soup

Ingredients
1 1/4 c. white beans (navy)1 hamhock, small3 ribs celery + leafy tops, chopped2 cloves garlic, chopped1 large potato, peeled & diced1 onion, minced7 c. cold watersalt & pepperbay leaf
Directions
Soak beans in water overnight or place beans in stock pot and cover with boiling water. Place lid on pot and let soak for 1 hour. (the pot should not be on any heat)

Drain soaking liquid and return beans to stock pot. Add 7 c. cold water and one small hamhock. Add bay leaf. Bring to a boil. Reduce heat. Cover and simmer for 1 1/2 hours or until beans are tender.

Remove hamhock to a cutting board and allow to cool.

Add to stock pot garlic, onion, potato, celery, salt and pepper to taste.

Remove meat from hamhock, chop, and return to stock pot, discarding bone and skin.

Simmer for 20-30 minutes.

With a potato masher, gently mash soup to give it a creamier texture.

Serve.

    I made this tonight. Needed to soak the beans a bit longer I think - they soaked for 4 hours. We added 1/4 cup of milk and cut some ham up into it instead of the ham hocks. Needed more liquid though. Next time I'll probably add a bit more water. Nice and filling! And tasty! - 1/1/13
