Leftover lamb stew (DrG)

Ingredients
Ingredients:Leftover Lamb Leg Roast, 200 grams2 medium onions, roughly chopped4 sticks celery, roughly chopped1 Red Bell pepper, sliced2 medium potatoes, diced1 leek, choppedPaprika, 2 tspCumin seed, 2 tsp2 Bay LeavesOregano, 2 tspSage, 2 tsp3 cloves garlic, crushedVegetable oilBeef Stock CubeWater, 750 ml
Directions
Add all the vegetables to a large pan and sweat down in the oil for 30 minutes on a low heat. Add the chopped leftover lamb and warm thgouh. Add the herbs, garlic, spices, stock and water and boil gently for 60 minutes. Add salt and pepper to taste - add thickening agent if required (could add lentils with the stock).
