Tofu Salad

Ingredients
2 lbs. extra firm tofu1/2 c. chopped celery1/2 cup grated carrot1/2 c. chopped red onion3/4 c. reduced-fat mayonnaise (Trader Joe's brand has 3 g. fat/serving, so use something equivalent to track properly)4 tbsp. nutritional yeast1 tsp. Spike natural seasoning1/2 tsp. onion powder1/2 tsp. garlic powder1 tsp turmeric1/2 tsp. paprika sprinkled on for garnish
Directions
Mash tofu, chop veggies, and mix all ingredients together in bowl. Ready to eat immediately or make a head of time and let flavors blend in refrigerator for a while.
Makes 6 cups or 12 1/2 cup servings. Lasts for a week, so a large batch like this will save you prep time.
