Chicken & Crimini Mushroom Soup

Ingredients

1 Tbsp Butter1 Shallot, chopped1 clove garlic, minced4 oz crimini mushrooms, sliced1 cup Chicken Broth2 Tbsp flour1/2 C. Milk4 oz. Chicken Breast, dicedOptional: Parsley & Red Chili Flakes
Melt Butter in Saucepan over med heat.
Add Shallots and cook until almost done then add garlic and cook until shallots are translucent.
Add crimini mushrooms and cook until liquid is gone from mushrooms.
Add Chicken Broth to pot and bring to low boil.
Place Flour into small measure. Add broth to combine the flour then transfer back into pan.
Continue to simmer adding milk and salt & pepper to taste.
Use immersion blender to puree the soup.
Continue to simmer then add chicken breast.
Cook through.
Ladel into bowls. Top with parsley and chili flakes.
