Crock Pot Black Bean Soup

4 cups chicken broth (organic preferred)1 cup chopped raw onion2 cups canned tomatoes, including juice1 cup canned or fresh yellow corn kernels2 cups canned black beans1 cup white rice, cooked1 cup salsa (I often use salsa verde)
Drain all canned ingredients, except tomatos. Chop onion(s). Put all ingredients in the crockpot on low and cook for at least 4 hours, up to six hours. Add water as necessary. This thickens up as it cooks. Serves approximately 8 one cup servings. This soup is very filling. I often add other left over vegetables to the soup, but this changes the calorie and nutrition counts a bit. Also, I drain and wash the corn and the beans which lowers the sodium count. To make this vegan, just substitute vegetable broth for chicken broth.
