1/2 cup Smart Balance (or your favorite margarine)1/2 cup brown sugar1.2 cup white sugaregg1/2 tsp vanilla extract1/4 tsp salt1 tsp baking sodatwo cups Oatmeal blended into flour1 cup whole wheat pastery floursix oz of dark chocolate chips2 tbls. of coconut
Makes 24 cookies
1. Cream the margarine and two sugars. Add the egg and the extract
2. Mix the oat flour, the whole wheat flour, salt, baking soda
3. Mix the flour into the creamed sugar. Add the chips and coconut (I just dump everything into the creamed sugar and the recipe works just fine)
3. Roll the dough into small golf ball sizes and squish them down with a fork. Bake at 375, less for chewy cookies and more for crunchy.
