Chelles Spanish Omelet

Egg substitute, liquid (Egg Beaters), 1 cup Onions, raw, 2 tbsp chopped *Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) Garlic powder, 1 tbsp Salt, 1 dash Pepper, black, 1 dash Mushrooms, fresh, 3 large Cheese, Kraft Mexican Style Taco Cheese, 0.75 cup Green Peppers (bell peppers), .50 cup, strips
Cook potatoes in microwave 1/2 way if using fresh, if using frozen potatoes just put in bottom of oven safe baking dish with olive oil to coat and add salt, pepper, garlic powder, bell peppers and onions. mix well to coat all ingredients. then slice and layer the mushrooms, then pour eggs over top of potatoes and top with cheese and bake at 350 for 25 mins or until eggs firm up and cook through
