low fat carrot rice

Ingredients
1 cup of brown rice1 onion (diced)1/2 cup of diced carrots1/4 cup of chopped (fresh) cilantro1/4 cup of sliced almonds1 tbsp of ground ginger1 tsp of red pepper flakes1 tsp of salt2 cloves of garlic1/4 cup of water
Directions
cook rice in a steamer or rice cooker according to directions (don't use minute rice)
saute carrots, onion and garlic in water on med high temp. until tender and water has evaported. Mix in steamed rice and spices. Add cilantro and almonds last...careful to not overstir. Makes approx. four 1/2 cup servings
