Morning Glory muffin (gluten free)

Ingredients
DRY2 c Bob's Red Mill gluten free flour1 1/2 t xantham gum1 1/4 c sugar2 T baking soda2 t cinnamon1/4 t saltCARROT MIXTURE2 c shredded carrots1/2 c raisins1/2 c chopped walnuts1/2 c shredded coconut1 apple, peeled, cored and gratedWET3 eggs beaten1/4 c oil3/4 c unsweetened applesauce2 t vanilla
Directions
Preheat oven to 350 F. Mix dry ingredients well and set aside. Mix carrot mixture well and add to dry ingredients. (Whenever you bake with raisins, you should always soak them in hot water for 10 minutes and then drain and pat dry before adding back to recipe, makes a huge difference in the finished product). Beat eggs with oil, applesauce, and vanilla and add to rest of the mixture, blend until just combined. Bake in greased muffin tins for 20 minutes.
