1 pound turkey sausage; 1 carton egg beaters, 1/2 cup chopped onions; 1 cup chopped mushrooms; 2 cups spinach; 1/2 cup mozerrella cheese.
Makes 6 jumbo muffins. Sautee turkey sausage in cast iron skillett with onions, mushrooms, spinach; Spoon sauteed mixture evenly between the six jumbo muffin tins; Beat 3 whole eggs; add to this the carton of egg beaters.Pour on top of sausage mixture in each tin. Sprinkle mozerrella cheese on top of each tin. Bake at 350 for about 20 minutes or until set. Cool for 10 minutes then enjoy.
