Salsa Skillet Chicken

2 lbs chicken, diced1 1/2 cups of salsa (homemade)1 cup frozen corn (thawed)6 med red potatoes (diced)Cheddar cheese shredded (Opt. topping)Light Sour cream (Opt. topping)Flour tortillas
Put potatoes into a microwave safe bowl. Microwave on high till cooked through. Add 1 tbsp of canola oil to hot skillet. Add chicken and cook till browned. Add Salsa, corn and potatoes and heat through. Serve with flour tortilla on side or wrapped in tortilla like a burrito. Top each individual serving with cheese and sour cream. Makes 10 1-cup servings
