Strawberry Graham Cracker Tarts

1/2 Vanilla Bean, split, seeds scraped out and reserved2 oz low-fat cream cheese9 packets of Truvia1 1/4 cups of nonfat Greek Yogurt2 tbls pomegranate juice6 Kebbler Ready Mini Graham Cracker Pie Crust3 large Strawberries1 kiwi
In a bowl of an electric mixer fitted with the paddle attachment, combine the vanilla bean seeds, cream cheese and Truvia. Beat until the mixture is slightly fluffy, about 1 min.
Scrape down the sides of the bowl. Add the yogurt and pomegranate juice. Beat until the yogurt is fully incorporated, about 1 min. Scrape down the sides of the bowl and beat for min. more.
Fill each tart shell with the cream cheese mixture. Arrange sliced strawberries and kiwi on top. Serve immediately or refrigerate until serving time.
