Turkey Kielbasa Cannellini

Ingredients
2 tbsp olive oil1 tsp minced garlic2 cups whole button (crimini) mushrooms1 oz. dry white wine1 (14oz.) turkey kielbasa1 (15 oz.) can cannellini (white kidney) beans4 basil leaves1 tsp ground thymesalt & pepper to taste
Directions
Heat olive oil in skillet.
Add garlic and mushrooms and saute', adding white wine until tender.
Stir in sliced kielbasa, cannellini, thyme, and basil and simmer over medium-low heat until mixture is evenly heated. Add salt and pepper to taste.

    I made this with chicken sausage. Instead of button mushrooms, I made do with the dried mushrooms I had on hand, which I rinsed in water and rehydrated in a bowl with a can of tomatoes. I tossed the entire bowl into the skillet. It was quite tasty, but I think I'd omit the thyme next time... - 4/23/08

    I added half of a green and red bell pepper each, oregano, and Italian seasoning. I also drained and rinsed the beans to cut down some of the sodium. My husband liked it too. - 3/12/08

    I doubled the garlic, added a small can of diced tomatoes, 1/2 a bell pepper chopped, and a small yellow onion, chopped...also a pinch of crushed rosemary. Everyone is right: this is terrific with a good green salad! - 1/9/08

    Oh so yummy, thank you for the recipe! I doubled the garlic, added some crushed red pepper, 1/2 a red pepper chopped, 1/2 an onion chopped and a whole bag of baby spinach. I served it with couscous which is a girls best friend time wise. Yumo!!! - 4/4/13

    I made this tonight, did not have Turkey Kielbasa, so I used another Dinner Sausage I had on hand. Was unable to find Cannellini Beans either dry or canned, so I used canned Great Northern Beans which I drained, to remove some of the sodium. It turned out great, served it over brown rice. - 1/18/11
