Whole Wheat Chicken Nuggets

Ingredients
5 chicken thighs2 slices whole wheat bread (for 1 cup bread crumbs)2 TBSP olive oil1 TBSP dijon mustard1 TBSP dillsalt and pepper to taste
Directions
Preheat oven to 350 degrees.

Tear bread into pieces. Use blender to make into bread crumbs. (Do one piece at a time.

Place bread crumbs on a cookie sheet and bake about 3-5 minutes, until crispy.

Cut chicken into strips or pieces as desired.

In a medium bowl pour olive oil and mustard over chicken and mix until evenly coated.

Then mix bread crumbs, dill, salt and pepper in a large bowl.

Add chicken and toss until each chicken piece is coated in bread crumbs.

Arrange chicken on a sheet pan in one layer (none touching).

Bake at 350 degrees for 20 - 25 minutes or until crispy, turning once.
