Chicken Rigatoni

Ingredients
1/2 chopped onion1 clove garlic (minced)1 Tbsp cooking oil2 14.5 oz cans unsalted diced tomatoes1 6 oz jar sliced mushrooms2 cups whole wheat elbow macaroni or rigatoni1 Tbsp crushed italian seasoning1/2 tsp crushed red pepper1 1/2 cups water12 oz boneless, skinless chickensalt and pepper to taste
Directions
Cook onion and garlic in large pot with oil until soft, but not browned. Add cans of tomatoes, mushrooms, italian seasoning, red pepper, rigatoni, and water. Bring to a boil, cover and simmer for 20 minutes. Salt and Pepper raw chicken and brown in a skillet coated with oil. Once chicken is cooked cut into chunks and add to pasta. Make sure all is heated through. Makes about 10 - 1.5 cup servings.
