Calico Beef Chili

Ingredients
1 lb extra lean ground beef1 medium onion, chopped2 medium stalks celery, cleaned and sliced1 medium carrot, peeled and chopped2 cups cooked red kidney beans1 large can diced tomatoes, approx 2 cups1 1/2 cups tomato juice3 T chili powder, or to taste1 T cumin2 tsp Tabasco sauce, or hot sauce of your choice
Directions
Chop vegetables and saute in large saucepan over medium heat, using 1 T of the canola oil. When softened, remove from pan and set aside. Add remaining oil to same pan and add ground beef. When browned, add vegetables back to pot. Sprinkle spices over and mix well. Stir in tomatoes and juice. Taste and adjust seasonings if required. Lower heat, cover and simmer for 45 minutes to allow flavours to blend.
Makes approximately 8 - 1 cup servings
