Roasted Curried Cauliflower

Ingredients
Cauliflower, raw, 1 head, large (6-7" dia) Chicken Broth, Low Sodium, FF 1 cup, 2 T*Pam Olive Oil - 1 second spray, 1 serving *Garlic fresh, raw, 1 clove*shallot, 2 tbsp ( I shallot)Curry powder, 1 tbsp *Cumin seed, 1 tsp red pepper flakes, 1/4 tsp
Directions
Makes 3-4 servings.

Separate head into even sized pieces. Mix remaining ingredients. Place in a large bowl and toss with the cauliflower. Place on baking sheet and roast at 425 for 20-25 min.

Can use 1-2 T olive oil in place of chicken broth
