Porcupine Meatball Soup

Ingredients
1 Tbsp Olive oil2 garlic cloves (crushed)1 Tbsp minced fresh ginger1 lb ground turkey1/2 c long-grain rice1 Tbsp soy sauce1/8 tsp cayenne1 large egg1 can (14 ounce) chicken broth6 carrots, sliced1 1/2 c water
Directions
Heat oil over medium heat. Add garlic and minced ginger. cook 1 minute. Transfer to bowl and combine with ground turkey, uncooked rice, soy sauce, cayenne, and egg until well blended. Form into meatballs with Tbsp size ice-cream scoop. Heat chicken broth, sesame oil, carrots, and water to boil. Add meatballs, cover, and simmer for 30 minutes. Serves 4.
