Chewy Honey Oatmeal Cookies

3/4 cup unsweetened applesauce1/2 cup honey2 T molasses1 large egg2 T skim milk1 1/2 tsp vanilla extract3 cups rolled oats1 1/4 cup brown rice flour1/2 tsp baking soda3/4 tsp ground cinnamon1/2 c chopped pecans1/2 tsp salt(I added 1 tsp of Xanthan Gum)
1. Preheat the oven to 375 degrees F.
2. Grease cookie sheets or use parchment paper
3. In a large bowl, whisk together the applesauce, honey & molasses
4. Beat in the egg and stir in the milk and vanilla
5. Mix in the flour, oats, baking soda and cinnamon until well blended
6. Fold in the nuts
7. Drop by rounded spoonfuls onto cookie sheet. You can roll into balls and flatten them a little if you do not want them to stay in spoonful-shape.
8. Bake for 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before moving to a wire rack to cool completely.
