Corn & Tomato Salad

Ingredients
3 ears of corn, grilled or wrapped in wax paper and cooked in the microwave1 cup grape tomatoes, sliced in half lengthwise2 green onions, finely chopped1 red or orange sweet bell pepper, chopped in 1/2 inch pieces1 Tbsp extra virgin olive oil2 Tbsp red wine vinegarsalt and pepper to taste (about 1-2 tsp each)
Directions
Cook the ears of corn, either on the grill or in the microwave. Cool and slice corn off cob. In bowl, mix corn, tomatoes, green onion, pepper, oil, and vinegar. Add salt and pepper to taste. Chill for at least 20 minutes before serving. If chilling longer, let sit at room temperature for 5-10 mintues before serving. Enjoy!
