LITE THAI Chicken, Veggies and Rice

Ingredients
3 ounces boneless skinless chicken (3 tenderloins)1 whole green pepper diced1 whole "tree" of brocolli cut1 cup tomato sauce1 13 ounce can of lite coconut milk1 tablespoon red curry paste1 cup prepared brown rice1 tablespoon canola oil
Directions
1. Dice pepper and cut brocolli.
2. Cook chicken on stovetop until almost cooked through using the oil
3. Add all other ingredients except for rice.
4. Let simmer on medium low for 20 minutes.
5. Serve on top of prepared rice
