Stuffed Dover Sole

Ingredients
1 lb tilapia filets (or dover sole)1 bunch fresh spinach2 cloves of garlic, chopped1 large tomato, diced1 tbsp olive oil2 tbsp Parmesan cheese, grated2 cups mushrooms, pieces or slices
Directions
Saute spinach and mushrooms until cooked.
Add garlic in the last 2-3 minutes.
Roll a golf ball-sized amount of spinach mixture in each fillet.
Place in casserole dish and top with diced tomatoes and Parmesan cheese.
Bake at 350*F for 20-25 minutes (until fish is flaky).

    sounds very easy, don't care for cooked spinach so I'll put it fresh in a salad. Love mushrooms, they might work well with eggplant. Might try with lemon instead of tomatoes, they seem to be in every dish. - 9/12/11
