Ingredients
500 gm diced casserole steak, trimmed of fat 1 onion, diced 2 tbsp corn starch pepper to taste 350 ml pineapple juice 4 slices of canned pineapple 2 tbsp tomato paste 1/2 green pepper 1/2 tbsp chopped parsley
Directions
*Pre heat oven to 180C

*Place meat into a plastic bag along with corn starch, salt & pepper.
*Shake well to coat all the meat.
*Place meat into a casserole dish with onions.
*Mix tomato paste with pineapple juice & pour over the meat.
*Place 4 pineapple slices on top of meat with a ring of green pepper on each.
*Cover & cook for 1 1/2 hours.
*Garnish with chopped parsley.
*Serve on a bed of boiled rice or assorted veges.
